  • 4 x 150g cod fillets
  • 10-12 cherry tomatoes
  • 1 x 125g pack mozzarella, roughly torn
  • small handful basil
If you don't have cod, try using another white fish

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Put the cod and tomatoes in a large roasting tin and lay the mozzarella pieces on top.
  2. Bake for 15-20 mins or until cooked through and the fish flakes easily. Once out of the oven, tear and scatter over the basil leaves and serve with new potatoes or salad.
