Rocket salad with pomegranate recipe

A fresh and exciting salad which marries peppery rocket with a sweet pomegranate dressing. See method

Ingredients

    For the salad

    • 110g (3 3/4oz) rocket
    • bunch spring onions, trimmed, then white parts finely sliced and green parts finely shredded lengthways
    • 1/2 pomegranate, seeds only

    For the dressing

    • 1/2 pomegranate, juiced
    • 45ml (3 tbsp) extra-virgin olive oil
    • ½ tsp Dijon mustard
    • 10ml (2 tsp) balsamic vinegar
    • handful chives, snipped

Method

  1. To make the dressing, combine the pomegranate juice, olive oil, Dijon mustard, balsamic vinegar and half the chives in a bowl. Season to taste.
  2. Toss the rocket and shredded spring onion greens in the dressing. Scatter with the pomegranate seeds, sliced spring onion whites and remaining chives. Serve.
