A fresh and exciting salad which marries peppery rocket with a sweet pomegranate dressing.
To make the dressing, combine the pomegranate juice, olive oil, Dijon mustard, balsamic vinegar and half the chives in a bowl. Season to taste.
Toss the rocket and shredded spring onion greens in the dressing. Scatter with the pomegranate seeds, sliced spring onion whites and remaining chives. Serve.
