Method

This serrano ham, lemon cream cheese and broad bean toast recipe is a delicious light lunch or great for afternoon tea this Mother's Day.

  1. Boil 300g frozen baby broad beans for 5 mins or until tender. Drain, refresh under cold running water, then squeeze to remove and discard the outer skins.
  2. Meanwhile, toast 4 slices Tesco Finest white sourdough. Put 120g soft cheese in a bowl and add the zest of 1 lemon plus 4 tsp juice; season, then mix well. Spread over the toasts, then top with the podded broad beans.
  3. Top each toast with a slice of Serrano ham, then crack over some black pepper to serve.
