Ingredients

  • 600g baby potatoes
  • 1 tbsp olive oil
  • 130g pack diced chorizo
  • 6 shallots, sliced
  • 30g flat-leaf parsley, chopped
If you haven't got any new potatoes, try dicing a large white potato instead

Method

  1. Preheat the oven to gas 7, 220°C, fan 200°C. Mix the potatoes with the olive oil; season and roast for 50 mins. 
  2. Dry-fry the chorizo and shallots for 10 mins, stirring until caramelised. 
  3. Squash each potato with the back of a spoon and pile into a serving dish with the chorizo mix. Scatter with chopped parsley.
