Ingredients

  • 1 carrot, grated or julienned
  • 1/4 white cabbage, finely sliced
  • 150g (5oz) shredded kale
  • 1 tbsp Greek yogurt
  • 1 lemon, juiced
  • 200g (7oz) smoked salmon
  • 4 tortilla wraps
  • 2 avocados, peeled, stoned and sliced

Method

  1. Mix the carrot, cabbage and kale together in a bowl, then stir through the yogurt and lemon juice. Allow to stand for 5 mins so the vegetables can soften slightly and the flavours develop.
  2. Lay 50g (2oz) smoked salmon on each wrap, then top with avocado slices. Divide the slaw between the wraps, then roll up and halve to serve.
