This smoked salmon and avocado wrap with kale slaw makes for a healthy yet tasty summer dish that’s bursting with zesty flavour the whole family will love.
Mix the carrot, cabbage and kale together in a bowl, then stir through the yogurt and lemon juice. Allow to stand for 5 minutes so the vegetables can soften slightly and the flavours develop.
Lay 50g (2oz) smoked salmon on each wrap, then top with avocado slices. Divide the slaw between the wraps, then roll up and halve to serve.
