Place the apples in a large saucepan. Sprinkle over the sugar and vanilla extract. Cover and cook over a medium heat, stirring occasionally, until the sugar has dissolved. Remove the cover and cook for another 10-15 minutes until the fruit is soft.
Break the apple up using a wooden spoon. Remove from the heat and mash a few times until you have a thick puree.
Spoon into bowls. Serve hot or cold.
