Ingredients

  • 2 nectarines, sliced into thin wedges
  • 2 plums, sliced into thin wedges
  • 2 peaches, sliced into thin wedges
  • 1/2 cabbage, sliced into thin strips
  • 1 tsp root ginger, grated
  • 2 spring onions, minced
  • 1 garlic clove, minced
  • 1 tsp rice wine vinegar
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method

  1. Slice the fruits into thin wedges and the cabbage into thin strands and combine in a bowl. Mix in the ginger, spring onions and garlic and drizzle over the vinegar. Leave to marinate for 30 minutes before serving to soften the fruit and cabbage in the vinegar.
