Sweet and sour red cabbage with apple recipe

This vibrant and hearty dish is a lovely pairing of red cabbage and sweet apples. It's a fantastic way to brighten up your meals and use leftover ingredients. 

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Put all the ingredients, except for the parsley (reserving some lemon zest for garnish), in a large roasting tin and toss to combine. Season with 1 tsp salt and some freshly cracked black pepper. Cover with foil and roast for 15 minutes.
  2. Remove the foil and return to the oven for 10 minutes, or until the cabbage is tender. To serve, transfer to a serving dish and scatter over the parsley and remaining lemon zest.
