Ingredients

  • 1 small head red cabbage, cored, sliced 2cm (3/4in) thick
  • 1 onion, sliced
  • 2 apples, peeled, cored and thickly sliced
  • 2 tbsp extra-virgin olive oil
  • 4 tbsp cider vinegar
  • 2 tbsp soft brown sugar
  • 1 lemon, zested
  • 1 small orange, zested
  • 1 tsp cumin seeds, roughly crushed
  • 1 tsp coriander seeds, crushed (or 1 tsp ground coriander)
  • 2 tbsp flat-leaf parsley, roughly torn

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Put all the ingredients, except for the parsley (reserving some lemon zest for garnish), in a large roasting tin and toss to combine. Season with 1 tsp salt and some freshly cracked black pepper. Cover with foil and roast for 15 minutes.
  2. Remove the foil and return to the oven for 10 minutes, or until the cabbage is tender. To serve, transfer to a serving dish and scatter over the parsley and remaining lemon zest.
