Ingredients

  • ice cubes
  • 50ml Smirnoff Spicy Tamarind
  • 1 lime, juiced (you need 25ml)
  • 25ml agave syrup
  • 50ml pineapple juice, chilled
  • soda water, chilled

For the garnish (optional)

  • 1 tsp desiccated coconut
  • 1 tsp demerara sugar
  • triangle of fresh pineapple and a few pineapple leaves

Method

  1. If making the garnish, sprinkle the desiccated coconut and demerara sugar on a plate and mix to evenly combine. Run the squeezed lime around the rim of a tumbler, then dip and roll in the coconut and sugar to evenly coat. Fill the glass with ice cubes.
  2. Add the Smirnoff Spicy Tamarind, lime juice, agave, pineapple juice and a handful of ice to a cocktail shaker; shake for 1 min or until the shaker feels icy cold on the outside. Strain into the glass and top up with soda water. 
  3. Garnish with a triangle of fresh pineapple and pineapple leaves, if you like.
