Preheat oven to Gas Mark 6, 200ºC, 400ºF. Roll out the pastry and cut into 6cm squares. Place on baking sheets lined with nonstick baking paper. Using a knife, lightly score a boarder around each square – about 1cm from the edge.
In a bowl toss together the tomatoes, oil, cheese, seasoning and herbs. Place a slice of cheese and half a tomato in the centre of each square. Bake in hot preheated oven for 15-20 minutes until risen and golden brown. Serve warm.
