Ingredients

  • 1 large carrot, grated
  • 1 large courgette, grated
  • 225g halloumi, grated
  • 2 spring onions, finely chopped
  • 90g breadcrumbs
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • ½ tsp salt
  • 2 eggs
  • 2 tbsp flour
  • 4 brioche buns, halved
  • 50g baby spinach leaves
  • 1 large tomato, sliced
  • 1 small red onion, sliced
  • ½ cucumber, peeled into ribbons
  • tzatziki, to serve
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method

  1. Put the courgette in a clean tea towel and squeeze tightly to remove any liquid. Tip into a large bowl and add the carrot, halloumi, onion, breadcrumbs, cumin, coriander, salt, eggs and flour. Stir well to combine.
  2. Put just over half the mixture in a food processor and pulse until the mixture starts to stick together. Return this back to the reserved mixture and mix well.
  3. Divide the mixture into 4 and shape into patties. Heat a barbecue or griddle pan to a medium heat. Cook the burgers for 4-5 mins each side or until golden and cooked through.  
  4. Add the burger buns to the barbecue until lightly toasted. To assemble the burgers, place spinach leaves on the bottom of each bun. Top with the burger, a slice of tomato, cucumber ribbon and a spoonful of tzatziki.
