Crispy potato waffles topped with creamy tuna mayo and melting mozzarella - what's not to love? This makes a smashing speedy lunch, dinner or late-night snack. You can even add jalapeños for a spicy kick. See method

Ingredients

  • 4 Tesco frozen potato waffles
  • 2 x 145g tins tuna chunks in spring water, drained
  • 200g tin sweetcorn in water, drained
  • 3 tbsp light mayonnaise
  • 3 spring onions, thinly sliced
  • 3 tbsp fresh coriander, finely chopped
  • 20g sliced green jalapeños in brine, drained and finely chopped (optional)
  • 50g grated mozzarella and cheese mix
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method

  1. Preheat the grill to high
  2. Cook the waffles in a toaster for 6-8 mins, or under the grill for 8-10 mins until cooked through and crisp.
  3. Mix together the tuna, sweetcorn, mayonnaise, spring onions, 2 tbsp coriander and the jalapeños, if using.
  4. Place the waffles on a baking tray and top with the tuna mix. Sprinkle over the cheese and grill for 2-3 mins until oozing. Serve topped with the remaining coriander.

Tip: Heat an air-fryer to 200°C and cook the frozen waffles for 6 mins, turning halfway through. Once loaded, cook for 1-2 mins or until the cheese is melted.
