Ice lollies made with fresh fruit make excellent treats. Children will enjoy making these, especially when the frozen lollies are unmoulded to reveal the slices of kiwi fruit sitting on the surface. See method
Ingredients
- 550g watermelon wedges, skin removed
- 2 kiwi fruit, topped, tailed and skin pared off
- 75g caster sugar
- 1 lime, finely zested and juiced
If you don't have any limes, try a lemon instead

Method
- In a blender, purée watermelon, 1 kiwi, the sugar and the lime juice on a high speed until smooth. Strain through a sieve into a jug, scraping the sieve with a spatula to force all the liquid through. Stir in the lime zest.
- Thinly slice the remaining kiwi into 16 rounds. Stick these to the outside of the lolly moulds. Divide the mixture between 8, 100ml lolly moulds with the kiwi slices and insert a stick into each. Freeze for at least 4 hours, or preferably overnight.
- To unmould the lollies, run the outsides of the moulds under hot water for 10 seconds then remove gently by the sticks (repeat if they won’t budge on the first attempt).
