Preheat the oven to gas 6, 200°C, fan 180°C. Line a large baking sheet with nonstick baking paper. In a bowl, mix together the cubed apple and 3 tbsp of the caramel.
Unroll the pastry and cut into 6 equal sized squares. Place roughly 2 tbsp of the apple mixture diagonally across one half of each pastry square, leaving a 1cm border, and brush the edges with water.
Fold one side over the filling to create a triangle. Press the edges together with a fork to seal. Make a small hole in top of each and transfer to the prepared baking tray. Bake in the oven for 20 mins until puffed up, golden and crisp.
Drizzle with remaining caramel and allow to cool slightly before eating.
