Enjoy all the crispiness of a schnitzel but without the frying, thanks to your air-fryer! If you prefer, you can swap the pork for chicken breasts or roasted aubergine slices. Serve with a zingy slaw for freshness. See method

Method

  1. For the slaw, mix the onion with the lemon juice and a pinch of salt. Add the shredded carrots, cabbage and parsley on top, ready to mix just before serving.
  2. Place the pork steaks between sheets of baking paper, then use a rolling pin to bash them to roughly 5mm thick. Put the flour, the beaten eggs, and the breadcrumbs with the sesame seeds in 3 separate bowls.
  3. Preheat the air-fryer to 200°C. Season the pork, then dip into the flour, then the egg and, finally , in the breadcrumb and seed mix. Drizzle with the oil and place in the air-fryer in a single layer for 15 mins, turning halfway, until golden, crisp and cooked through.
  4. Mix the slaw and serve with the crispy schnitzels and lemon wedges.

Freezing and defrosting guidelines

Freeze the schnitzels only; freeze flat, layered between baking paper to prevent sticking, in an airtight container. Defrost completely in the fridge before cooking. In order to enjoy optimum flavour and quality, frozen items are best used within 3 months of their freezing date. For more tips on freezing and defrosting food, read our article Love Your Freezer.
