Ingredients

  • 750g Tesco Finest baby potatoes, pricked all over with a fork
  • 1 tbsp olive oil
  • 3 rashers Tesco Finest dry cure smoked streaky bacon
  • 100g Philadelphia Original
  • 5g fresh chives, finely sliced (optional)

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C.
  2. In a large roasting tray, toss the potatoes in the oil and a pinch of sea salt until evenly coated. Bake on the middle shelf of the oven for 50-55 mins until evenly golden, the skin is crisp, and a fork passes easily through the potato. Set aside to cool for 15 mins.
  3. Meanwhile, on a separate tray, bake the bacon in the oven for 12-15 mins until golden and crisp. Finely chop.
  4. Cut a cross into the top of each potato. Fill each with a teaspoon of Philadelphia Original and top with a sprinkle of crispy bacon, chives, if using, and a grind of black pepper. Serve immediately.
