These mini rarebit potatoes are the ultimate indulgent Christmas party food. Crispy roast potatoes are topped with a melting cheese sauce and grilled until bubbling for a comfort food veggie canapé. See method

Ingredients

  • 500g Tesco Finest baby Venezia potatoes
  • 2 tbsp olive oil
  • 15g chives, chopped

For the rarebit mixture

  • 120g mature Cheddar, grated
  • 50ml beer (or milk)
  • ½ tbsp Worcestershire sauce
  • 1 tsp English mustard
  • 1 egg yolk
If you don't have any Cheddar, try using another hard cheese

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Put the potatoes on a lipped baking tray and drizzle with the oil. Roast for 50 mins until golden and cooked through.
  2. Meanwhile, put the rarebit ingredients into a food processor and season well. Blitz until combined (it does not need to be completely smooth).
  3. When the potatoes are cooked, remove from the oven and leave to cool for 10-15 mins until they are cool enough to handle. Preheat the grill to high. Slice each potato in half lengthways, to create a flat surface. Spread 1 tsp of rarebit mix on top of each potato.
  4. Grill the potatoes for 2-3 mins until golden and bubbling. Sprinkle with chives to serve.
