This French-inspired burger will keep your guest wanting more! Try a juicy meat patty combined with the sharp, sweet flavours of gherkins, creamy Dijon mustard and sweet shallot topped with a poached egg.
In a bowl, combine the chopped shallots, capers, gherkins and parsley. Season to taste and mix well.
Divide the mixture into two, adding the beef to half the mixture and the mayonnaise to the other half. Set aside the mayonnaise mixture.
Pound the burger mixture together and divide into two. Shape into elongated burgers to fit the brioche rolls.
Cook the burgers under a preheated grill or on a preheated barbecue for 3-4 minutes each side, until the meat is cooked through and no pink juices remain.
Bring a pan of salted water to the boil, and poach the eggs for 3 minutes.
Slice the brioche buns open and lightly toast them. Serve the burgers in the buns with the relish mayo, tomato slices and poached eggs.
