Broccoli and peanut butter soup recipe

This simple broccoli soup is truly tasty and the addition of peanut butter really brings a delicious depth of flavour. 

In a saucepan, fry the onion and garlic in olive oil for 2 minutes.

Add the broccoli and crumble over the stock cube. Pour in 400ml of freshly boiled water and add the milk. Bring up to the boil, then reduce the heat and gently simmer for 10 minutes. Remove from the heat.

Using a stick blender or heat resistant liquidiser, whizz the soup until smooth. Stir in the peanut butter, until completely melted; season to taste. Serve with crusty wholemeal bread.
