Rustling up a quick, nutritious midweek supper couldn't be easier with this delicious noodle dish.

  1. Mix the dressing ingredients in a bowl. Cook the noodles according to pack instructions. Drain and tip into a large bowl. Add the dressing and mix well.
  2. Steam the broccoli with the carrots until al dente. Toss the veg through the noodles and scatter with the peanuts.
