Ingredients

  • 250g (8oz) fresh egg noodles
  • 400g (13oz) tenderstem broccoli, cut into 2·5cm (1in) pieces
  • 2 carrots, cut into julienne strips
  • 4 tbsp roasted peanuts, chopped

For the dressing

  • 4 tbsp reduced salt soy sauce
  • 3 tbsp soft brown sugar
  • 2 red chillis, deseeded and thinly sliced
  • 1 garlic clove, finely chopped
  • 2·5cm (1in) piece ginger, chopped
  • juice of 2 limes
  • 1 tbsp rice wine vinegar
If you haven't got any egg noodles, try using pasta like spaghetti instead

Method

  1. Mix the dressing ingredients in a bowl. Cook the noodles according to pack instructions. Drain and tip into a large bowl. Add the dressing and mix well.
  2. Steam the broccoli with the carrots until al dente. Toss the veg through the noodles and scatter with the peanuts.
