Ingredients

  • 200g self-raising flour
  • 4 spring onions, finely sliced​
  • 120g Tesco Finest extra-mature Cheddar, grated
  • heaped ½ tsp fine salt
  • 1 tsp mustard powder
  • 200g natural yogurt
  • 1 tbsp olive oil
No self-raising flour? Add 2 tsp baking powder for every 150g plain flour

Method

  1. Line a baking dish, roughly 24cm x 14cm x 5cm, with baking paper. Mix the flour, spring onions, 100g of cheese, the salt and mustard powder together in a medium mixing bowl. Add the yogurt and oil. Mix together with a spoon and then your hands to form a dough. Once it’s smooth, wash your hands and leave them wet, then transfer the dough to the baking dish and press into the corners (your wet hands will stop them sticking to the dough). 
  2. Scatter over the remaining cheese, then microwave on full power for 10 mins at 1000w* or 12 minutes at 800w, until the dough has risen slightly, and looks cooked. Leave to stand for 2 mins, then lift onto a wire rack and cool to just warm before slicing and eating.
