Ingredients

  • 75g unsalted butter, plus extra to grease
  • 150g granulated sugar
  • 1 tsp vanilla extract​
  • 1 medium egg
  • 130g plain flour
  • 65g milk cooking chocolate, finely chopped (or use chocolate chips)
  • ice cream, to serve (optional)

Method

  1. Butter 6 ramekins or small mugs, then set aside. 
  2. Put the butter, sugar, vanilla and egg into a medium mixing bowl and beat with an electric whisk until smooth. Briefly beat in the flour, then stir through the chocolate. 
  3. Divide between the ramekins, then microwave one at a time for 1 min at 800w. Leave to stand for 2-3 mins before serving alone or with a scoop of ice cream. You can either chill or freeze the others – if freezing wrap in clingfilm, then unwrap and cook from frozen.

Tip: This mixture freezes brilliantly and can be cooked from frozen. Microwave for 1 min 15 secs at 800w, then leave to stand for 2-3 mins before serving.
