Ingredients

  • 3 rashers unsmoked streaky bacon
  • 1 large egg
  • 1 tbsp milk
  • 20g Gruyère cheese, finely grated
  • 1 bagel, sliced in half
  • 10g butter
  • 1 tsp maple syrup

Method

  1. Cook the bacon in a dry frying pan over a medium heat for 2-3 mins each side until crispy. Take off the heat and keep warm.

  2. Whisk the egg, milk and cheese in a bowl together and season. Dip both bagel halves in the egg mix and leave to absorb for 30 seconds, then flip and soak the other side.

  3. Heat the butter in a large pan. Fry the bagels, cut side down, for 2-3 mins over a medium heat until golden. Flip on to the other side and cook for another 2 mins. 

  4. Serve on a plate topped with the bacon and drizzled with maple syrup.
