Ingredients

  • 4 tbsp Greek yogurt
  • 1 tbsp mayonnaise​
  • ½ lemon, zested and juiced
  • 15g Parmesan, grated, plus extra shavings to serve
  • 2 small garlic cloves, 1 minced, 1 left whole
  • ½ tsp Dijon mustard
  • ½ tsp Worcestershire sauce
  • 1 tsp capers
  • 1 ciabatta
  • 1 tbsp extra-virgin olive oil
  • 245g pack ready to eat 2 boneless chicken breasts, sliced (or use leftover roast chicken meat)
  • 1 Little Gem lettuce, roughly shredded
  • ½ x 50g tin anchovies (optional)

Method

Turn your favourite salad into a hearty sandwich. Coat ready to eat chicken in homemade Caesar dressing with capers, then load into a ciabatta roll with anchovy fillets and Parmesan shavings - this is sure to liven up lunchtime.

  1. In a large bowl, mix together the yogurt, mayo, lemon zest and juice, grated Parmesan, minced garlic, mustard and Worcestershire sauce. Season well with black pepper and a little salt. Stir through the capers and set aside.
  2. Heat a griddle pan or frying pan over a high heat. Slice the ciabatta in half and then in half lengthways. Drizzle the oil on the cut sides and griddle the ciabatta cut-sides down for a few mins, until lightly charred. Using the whole garlic clove, lightly rub it over the charred ciabatta for extra flavour.
  3. When ready to serve, toss the chicken and shredded lettuce through the dressing making sure everything is evenly coated. Pile onto the bottom halves of the ciabatta and top with a couple of anchovies, if using, and extra Parmesan shavings. Cut in half and eat immediately or wrap in foil for your packed lunch.

Tip: You can swap the homemade dressing with 3-4 tbsp Tesco Caesar Dressing, if you prefer.
