Serve up a plateful of finger-licking chicken wings marinated in a deliciously zesty and sweet sauce and get everyone to tuck in. Dip them into our creamy smoked paprika mayo for an extra special treat.
- Combine half the lime zest and juice in a large bowl with the oil, ketchup, honey and cumin. Add the chicken wings and stir well until evenly coated, then transfer to the fridge to marinate for at least 2 hrs, or overnight.
- Preheat the oven to gas 4, 180°C, fan 160°C and line a roasting tin with nonstick baking paper. Add the wings, reserving the marinade juices, and roast for 20 mins. Carefully turn the wings and add the remaining marinade, then cook for a further 15-20 mins, until the wings are sticky and browned.
- Meanwhile, in a bowl, combine the mayonnaise with the remaining lime juice and zest, garlic and the smoked paprika. Season to taste.
- Cool the wings to room temperature and serve with the mayo for dipping.
Tip: If you like your chicken spicy, add a chopped red chilli to the marinade.
