I went vegan and started adding more variety to my diet. I've found curries to be easily varied, quick and super healthy.

Slowly fry onions in olive oil on low heat until soft and translucent. Then add ALL other ingredients plus half pint of veg stock and some chopped tomatoes to taste. Simmer for half hour. Done.

  • 1 tin canned chickpeas
  • Tsp ground turmeric
  • 2tsp cumin
  • 2 2 cloves garlic
  • Half tsp ½tsp ginger
