This tasty twist on traditional fajitas uses juicy chipolatas, which are quick and easy to cook. With all the classic spicy and zesty flavours of fajitas plus your favourite toppings, this is a winning dinner for any night of the week. See method

Ingredients

  • 1 tbsp vegetable oil
  • 8 Tesco pork chipolatas, snipped to separate and cut into bite-size chunks
  • 2 red onions, thinly sliced
  • 2 mixed peppers, thinly sliced
  • ½ x 30g sachet fajita seasoning
  • ½ x 30g pack fresh coriander, roughly chopped
  • ½ lime, juiced​
  • 4 plain tortilla wraps
  • ¼ iceberg lettuce, roughly chopped
  • 200g mild tomato salsa dip
  • 40g mature Cheddar, grated
  • 4 tbsp soured cream

    Method

    1. Heat the oil in a large frying pan over a medium-high heat. Add the chipolatas and fry for 5 mins, until evenly golden. Add the onions and peppers and fry for 5 mins longer, until starting to soften and the sausages are fully cooked. Mix in the fajita seasoning and cook for 2 mins, until aromatic. Remove from the heat and stir in half the coriander and lime juice.
    2. Warm the tortilla wraps in the microwave for 20 secs until soft, then fill with the sausage mix and top with the lettuce, salsa, cheese and soured cream to serve.

    Tip: Cook up the remaining four chipolatas from the pack for tasty leftovers for a picnic or packed lunch.
