Ingredients

  • 1kg Brussels sprouts, trimmed
  • 1 tsp vegetable oil
  • 150g chorizo, chopped
  • 25g hazelnuts, toasted and chopped
  • 1 sprig thyme, chopped

Method

  1. Simmer the sprouts in boiling water for 7 mins or until tender. Drain, then halve.
  2. Heat the oil in a large frying pan over a medium heat. Fry the chorizo for 2 mins, turning halfway.
  3. Add the sprouts and cook for 2 mins to warm through. Scatter over the hazelnuts and thyme.
