Ingredients

  • 1kg Brussels sprouts, trimmed
  • 1 tsp vegetable oil
  • 200g smoked bacon lardons
  • 150ml crème fraîche
  • 20g Parmesan, grated

Method

  1. Simmer the sprouts in boiling water for 7 mins or until tender. Drain, then halve.
  2. Meanwhile, heat the oil in a large frying pan over a medium heat. Fry the bacon for 5-7 mins until crisp.
  3. Mix the crème fraîche with the Parmesan and some black pepper. Add the sprouts to the pan. Pour in the crème fraîche; stir to heat.
