Ingredients

  • 12 scallops
  • 2tbsp grapeseed oil
  • 1tbsp butter
  • 1tbsp snipped chives

Dressing

  • juice 1 lime
  • juice 1 lemon
  • 1tbsp soy sauce
If you don't have any limes, try a lemon instead

Method

  1. Mix together the dressing ingredients and set aside.
  2. Heat the oil and butter in a nonstick frying pan. When hot add the scallops and cook for 2 minutes per side. Remove from the pan and slice in half horizontally. Arrange between 4 plates, drizzle some of the buttery pan juices on top, spoon over the dressing and scatter over the chives.
