Combine all the ingredients in a bowl, and then divide the mixture into two. Take each quantity, pile it on a plate and use your hands to form it into a round, flattened shape about ½ inches (1cm) high. Garnish with some crisp salad leaves all round.

  • 225g mixed prepared crab meat (2 half-shells)
  • 4 small gherkins, finely chopped
  • 1tbsp capers, chopped
  • 1tbsp finely chopped fresh coriander leaves
  • 2tbsp fresh lime juice + 1tbsp finely grated lime zest
  • 1 shallot, finely chopped
  • 2 pieces of celery, sliced
  • 1 ripe avocado, cut lengthwise and sliced
  • 1tbsp dry white wine
  • 1tbsp light olive oil
  • a few drops of tabasco sauce
  • salt, to season
  • freshly ground black pepper, to season
  • a few crisp salad leaves
