Ingredients

  • 2 large cucumbers, cut into 2cm rounds
  • 60g Tesco Finest finely sliced Wiltshire cured ham, torn
  • 1 ripe avocado, cut into 1cm chunks
  • 1 carrot, peeled and coarsely grated
  • ½ x 110g tin Tesco tuna steak in spring water, drained
  • 30g tinned sweetcorn, drained
  • 2 tbsp light mayonnaise
  • 1 red pepper, cut into 1cm thick chunks
  • 50g smoked salmon, torn
  • 1 spring onion, thinly sliced
  • 1 tsp sesame seeds
  • 2 tbsp reduced-salt soy sauce

Method

  1. Use a small circular cookie cutter or a serrated knife to remove the seeds from the cucumber. Save the seeds to toss through a salad.
  2. Divide the cucumber rings into three. Fill a third of the cucumber with ham, some avocado and carrot. Mix the tuna with the sweetcorn and mayonnaise and use to fill a third of the cucumber, along with some pepper and carrot. Finally, fill the remaining third with smoked salmon and any remaining avocado and pepper.
  3. Arrange on a platter and sprinkle with spring onion and sesame seeds. Serve with a dipping bowl of soy sauce.
