Ingredients

  • 3 medium eggs
  • 150g (5oz) caster sugar
  • 150g unsalted butter, melted and cooled, plus extra for greasing
  • 150g (5oz) plain flour, plus extra for dusting
  • 1 tsp baking powder
  • 2 limes, zested and juiced
  • 75g icing sugar
  • green food colouring
  • 75g dark chocolate, melted
If you don't have any limes, try a lemon instead

Method

  1. In a mixing bowl, beat the eggs and sugar with an electric whisk, until light and frothy. Fold in the butter, flour, baking powder, lime zest and a pinch of salt. Chill for 20 mins.
  2. Preheat the oven to gas 6, 200°C, fan 180°C. Brush a 12-hole madeleine tray with melted butter, then lightly dust with flour.
  3. Divide the chilled batter in half, then spoon the first half into the moulds, filling to about three-quarters full. Bake for 8-10 mins, or until risen and golden. Turn out on to a wire rack to cool completely. Repeat with the remaining batter to make 24 madeleines.
  4. To make the lime glaze, put the icing sugar in a bowl and gradually add the lime juice, stirring until it reaches a thin coating consistency. Stir in 1-2 drops of the food colouring for a pale green glaze.
  5. Dip 12 madeleines in the glaze and the remaining 12 in the melted chocolate. Leave to set on a wire rack.
