Celebrate Bonfire Night with these sizzling, spicy sausage subs. They're topped with charred smoky veg and cheese for an epic sandwich that's packed with fireworks of flavour. See method

Ingredients

  • 6 Tesco Finest sausages
  • 1 tbsp olive oil
  • 1 white onion, finely sliced
  • 2 small peppers (any colour), finely sliced
  • 2 cloves garlic, crushed
  • ½ tsp chilli flakes
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp honey
  • 4 sub rolls, sliced like a hotdog bun
  • 30g mature cheddar cheese, grated
  • chilli sauce, to serve
  • ketchup, to serve

    Method

    1. Cook the sausages to pack instructions. Once cooked, cut each sausage in half lengthways.
    2. Meanwhile, heat the oil in a nonstick frying pan over a high heat. Stir fry the onion and peppers for 5-6 mins until lightly charred and softened. Add the garlic, spices and honey, then fry for another 2 mins. Season.
    3. Divide the veg between the sub rolls, then top each with 3 sausage halves. Sprinkle over the cheese and serve with ketchup or chilli sauce, if you like.
