These nutritious fruity granola bars are perfect for breakfast on the run, lunchboxes or as an afternoon pick me up. With endless possible flavour combinations, you'll want to make these energy-packed snacks again and again.
Put the dates in a bowl, then pour over enough boiling water to cover. Leave for 30 minutes until softened, drain, reserving the water. Place the dates in a food processor along with the honey and 3 tbsp of the soaking water. Whiz until smooth.
Preheat the oven to gas 4, 180°C, fan 160°C.
Stir together the date mixture with the remaining ingredients and a pinch of salt, if liked, until the mix just holds together. Add a little extra water if necessary. Line a 20x20cm (8x8in) baking pan with baking paper. Press the mixture inside. Bake in the oven for 20-25 minutes until firm and golden. Leave to cool in the tin for 5 minutes, then remove and use a sharp knife to cut into 10 bars. Leave to cool completely. Will keep in an airtight tin for up to 5 days.
Tip: Experiment with dried fruit flavours – apricot, cranberry, currants dried pears, apples and raisins all work well.
