This simple chicken mayo is the perfect filling for sandwiches, wraps or in a pasta salad. Gochujang adds a nice sweet and spicy flavour that you won't be able to get enough of. Make ahead of time for your weekly lunches or dinners. See method

Ingredients

  • 4 ready-to-eat roast chicken breasts, cut into chunks
  • 4 spring onions, thinly sliced (green parts too)
  • 200g tin sweetcorn, drained
  • 15g coriander, leaves finely chopped
  • 3 tbsp Greek-style yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp gochujang
  • ½ lime, juiced​

Method

  1. Add all the ingredients to a bowl and mix well to combine. Season to taste.
  2. Enjoy straight away or decant into Tupperware. It will keep for 3-4 days in the fridge.

Tip: Serve this stuffed into pittas, toasted into a quesadilla or as a pasta salad.
