Get fruity with this vibrant salad made with red, pink and yellow grapefruit, cantaloupe and honeydew melon and oranges. A no-cook dessert that's light and refreshing and packed with natural sweetness.

  1. Using a sharp knife, slice the skin from the top and bottom of the grapefruits so they stand firmly on a board. Remove the remaining skin and pith with a knife, cutting thick strips from top to bottom. Cut each grapefruit into 5 or 6 slices horizontally and discard any seeds. Repeat with the oranges.
  2. Scoop the seeds from the melon halves with a spoon and discard. Slice into thin wedges, then remove the skin. In a small bowl, combine the ginger, lime juice and honey to make a dressing, then stir through the mint.
  3. Arrange the grapefruit, orange and melon on a large serving platter and drizzle over the dressing. Scatter over the lime zest and mint leaves. Serve with lime wedges for squeezing over.
