Ingredients

  • 115g salad cheese
  • 200g Greek-style yogurt
  • 2 x 9-pack Tesco Finest pastry tartlets, or 18 oatcakes
  • 2 baby cucumbers, cut into 1cm diagonal slices
  • 9 cherry tomatoes, halved
  • 9 Kalamata olives, halves
  • 3 thyme sprigs, leaves picked

Method

  1. Use a fork to mash the salad cheese with the Greek-style yogurt; season. Add 1 tbsp each to the pastry tartlets or top the oatcakes, if using.

  2. Divide the sliced baby cucumbers, halved cherry tomatoes and halved olives between the tartlets. Scatter with thyme leaves to serve.
