Grilled prawns with passion fruit dressing recipe

Add a fresh twist to a classic prawn salad with tropical passion fruit and crunchy tortillas. The sweet passion fruit pulp pairs beautifully with the king prawns and peppery wild rocket. You can make this easy recipe in just 30 minutes. See method

Ingredients

  • 300g (10oz) raw peeled king prawns
  • 4 handfuls wild rocket
  • 1 green chilli, seeded and thinly sliced
  • plain corn tortilla chips, to serve

For the dressing

  • 4 passion fruits, halved
  • 3 limes, juiced
  • 1 small red onion, halved and sliced
  • small handful coriander, finely chopped, plus extra leaves to garnish
  • 1 tsp caster sugar
If you don't have any limes, try a lemon instead

Method

  1. Preheat the grill to medium. Scoop out the passion fruit pulp and pass through a fine sieve, collecting the juice in a bowl below. Rinse the seeds and add to the juice. Add the lime juice, onion, coriander, sugar and 1 tsp salt. Mix well to combine.
  2. Thread the prawns onto skewers and grill for 5-7 minutes, turning once, until pink and cooked through. Divide the prawns and rocket between 4 plates and spoon over the dressing. Sprinkle with the chillies and coriander leaves. Serve with the tortilla chips.
