Ingredients

  • 15ml (1 tbsp) olive oil
  • 1 onion, finely chopped
  • 1 garlic clove, chopped
  • 250g (8oz) olive bread, torn or cut into chunks
  • 150g (5oz) light mature cheese, grated
  • 150g (8oz) roast ham, cut into pieces
  • 100g (3 1/2oz) cherry tomatoes, diced
  • 4 eggs
  • 1 tbsp wholegrain mustard
  • 2 tbsp Parmesan, grated
  • 100ml (3 1/2fl oz) semi-skimmed milk
  • 150g (5oz) ball half fat italian mozzarella

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Heat the oil in a frying pan and cook the onions for a few mins, until beginning to turn golden. Stir in the garlic and cook for another min. Set aside to cool.
  2. In a baking dish, toss together the bread, grated mature cheese, pieces of ham and cherry tomatoes.
  3. Beat together the eggs with the mustard, Parmesan, milk and cooled onion mixture. Season and pour over the bread. Dot the mozzarella on top. Bake in the oven for 15-20 mins, until golden and puffed. Serve with a green salad.
