Ingredients

  • 2 x 240g bags sliced spring greens
  • 2 tbsp honey (or maple syrup, to make it vegan)
  • 3 tbsp olive oil
  • 1 tbsp wholegrain mustard

Method

  1. Steam or boil the greens for 4-6 mins until tender, wilted and dark green. Drain if necessary.
  2. Whisk the honey or syrup with the oil and mustard in a large bowl; season. Tip in the greens and toss with the dressing to serve.
