Celebrate the Chinese New Year in style with this simple yet authentic, totally tasty side. This dish is really easy to prepare and makes a great contribution to a Chinese feast, combining refreshing cucumber with sharp vinegar and fiery chilli. 

In a bowl, combine the cucumber, vinegar, garlic, chilli and sugar. Set aside to marinate for 30 minutes.

Drizzle over the sesame oil and serve.

Serve with Braised sweet and sour spare ribs and Steamed rice with toasted sesame seeds and coriander.
