The ultimate cheese toastie, the name of this snack literally translates as mozzarella ‘in carriage’ as the bread forms a crisp vehicle for the hot, stringy cheese. Served with a rich tomato and pepper sauce, these gooey sandwiches are a guaranteed crowd-pleaser and take just 20 minutes to prepare.
To make the sauce, heat the oil in a pan. Add the peppers and cook for 10 minutes, then stir in the tomatoes, garlic and rosemary. Simmer for 5 minutes more; season to taste.
Butter the bread, then divide the mozzarella, ham (if using) and basil between 4 slices. Top with the remaining bread.
Heat enough oil to cover the base of a large frying pan. In
