  • 1.5 ltr dry cider
  • 100g demerara sugar
  • 2 cinnamon sticks
  • 2 star anise
  • 1 tsp allspice
  • peeled zest of 1 orange
  • peeled zest of 1 lemon

  1. Place all of the ingredients in a large saucepan over a low heat. Stir occasionally until the sugar has dissolved. Leave on a low heat for 10-15 mins for all of the flavours to infuse.
  2. Pour through a sieve into a jug or pan, and ladle into heatproof glasses or cups.
