Ingredients

  • the peel of 1 orange
  • 10g ginger peel
  • ¼ tsp of honey or sugar (or to taste)
  • mint or rosemary, to garnish

Method

  1. Use a small, serrated knife to cut away as much of the white pith as possible from the peel of 1 orange. You should be left with about 35g peel; put in a heatproof jug or the base of a cafetière.
  2. Rinse your ginger peel, then add to the jug. Pour over 350ml boiling water and leave to steep for 2 mins. Strain into 2 teacups or heatproof glasses and sweeten each with ¼ tsp of honey or sugar (or to taste). Garnish with mint or rosemary, if you like, to serve.
