This super-easy marinade transforms meat, fish and veg into a fantastically flavoursome dish. Store in the fridge for 2-3 days and you can create tasty meals in an instant. See method

Ingredients

  • 10g fresh oregano, leaves picked and finely chopped
  • 2 shallots, finely chopped
  • 1 garlic clove, crushed
  • ½ lemon, zested and juiced
  • 80ml olive oil

Method

  1. Mix all the ingredients together in a small bowl or a resealable bag; season.
  2. Use as a marinade for lamb or chicken thighs, or toss over root vegetables before roasting. Will keep in a jar in the fridge for 2-3 days.
