Ingredients

  • 1 tsp vegetable oil​
  • 20g unsalted butter​
  • 1 large baking potato, diced
  • 454g pack 8 reduced-fat pork sausages, each cut into 2 pieces

For the quick pickled onions

  • 2 red onions, sliced
  • ½ tsp garlic granules (optional)
  • pinch dried mixed herbs
  • ½ white cabbage, chopped
  • 1 red pepper, finely chopped
If you don't have red onions, try using white, brown or spring onions

Method

  1. Heat the oil and butter in a large nonstick frying pan. Cook the potato for 5 mins, stirring regularly, until beginning to brown. 
  2. Add the sausage pieces and cook until lightly browned, about 3 mins. Add the red onion, garlic granules and a pinch of mixed herbs and season with salt and black pepper. 
  3. Cook for 3-4 mins until the onion is beginning to soften, then add the chopped cabbage and red pepper. Fry until softened, with the lid on, about 6-10 mins, adding a splash of water if the veg is sticking to the pan. 
  4. Divide between 4 plates.
