Pan-fried sausage and cabbage hash recipe

Ingredients
- 1 tsp vegetable oil
- 20g unsalted butter
- 1 large baking potato, diced
- 454g pack 8 reduced-fat pork sausages, each cut into 2 pieces
For the quick pickled onions
- 2 red onions, sliced
- ½ tsp garlic granules (optional)
- pinch dried mixed herbs
- ½ white cabbage, chopped
- 1 red pepper, finely chopped
If you don't have red onions, try using white, brown or spring onions

Method
- Heat the oil and butter in a large nonstick frying pan. Cook the potato for 5 mins, stirring regularly, until beginning to brown.
- Add the sausage pieces and cook until lightly browned, about 3 mins. Add the red onion, garlic granules and a pinch of mixed herbs and season with salt and black pepper.
- Cook for 3-4 mins until the onion is beginning to soften, then add the chopped cabbage and red pepper. Fry until softened, with the lid on, about 6-10 mins, adding a splash of water if the veg is sticking to the pan.
- Divide between 4 plates.
