Ingredients

  • 2 x packs Tesco Finest 10 pigs in blankets
  • 1kg potatoes, peeled and roughly chopped
  • 50g butter​
  • 2 large onions, finely sliced​
  • 1 bay leaf​
  • 1 tsp dried thyme
  • 2 tbsp flour
  • 2 tbsp cranberry sauce, plus extra to serve
  • 500ml beef stock
  • 1 tbsp Worcestershire sauce
  • 75ml milk
  • 1 tbsp wholegrain mustard​
  • seasonal greens to serve

Method

  1. Cook the pigs in blankets to pack instructions.
  2. Whilst they’re cooking, boil the potatoes for 15-20 mins until tender. Drain and set aside.
  3. To make the onion gravy, melt 25g butter in a large frying pan over a medium-high heat. Add the onions and bay leaf and fry the onions for 20 mins, stirring often, until soft and lightly caramelised. Add a splash of water if they start to catch.
  4. Sprinkle over the dried thyme and flour and stir to coat the onions. Add 1 tbsp cranberry sauce, beef stock and Worcestershire sauce and simmer until you have a smooth, glossy gravy. Season.
  5. When the pigs in blankets have 5 mins cooking time left, using a pastry brush or teaspoon, glaze them with the remaining 1 tbsp cranberry sauce. Return to the oven.
  6. Mash the potatoes with the remaining 25g butter, milk and mustard until smooth.
  7. Divide the mashed potato between plates, top with the pigs in blankets (5 per person) and drizzle over the onion gravy. Serve with seasonal greens and extra cranberry sauce if you like.

Tip: You can make your own pigs in blankets by wrapping chipolatas with streaky bacon.
