  • 250ml (8fl oz) pomegranate juice
  • 2 strawberries (optional)
  • 3 mint sprigs
  • ice cubes
  • 200ml (⅓pt) sparkling water
  • 400ml (⅔pt) pineapple juice
  • 2 thick pineapple rings, cut into wedges, to serve (optional)

  1. Pour the pomegranate juice into a blender or food processor. Remove the stalks from 6 strawberries and add to the blender along with the mint. Blitz for 2 minutes, until smooth.
  2. Add the ice to the serving jug and pour over the sparkling water and the pineapple juice. Top with the strawberry and pomegranate mixture and serve. Garnish each glass with a strawberry halve and a wedge of pineapple, if you like.
