A refreshing fruity drink for all the family. You can make it alcoholic by adding peach schnapps or apricot brandy and sparkling wine. See method

Ingredients

  • 300g (10oz) tinned plums in light syrup
  • 1.2 litres (2pts) lemonade
  • lemon slices, to decorate
  • ice to serve

Method

  1. Stone the plums and purée them in a blender with the syrup until smooth with no bits.
  2. Divide between 6 tall glasses and add 2 ice cubes to each. Top up with lemonade for a virgin plum bellini or add 2 tablespoons of peach schnapps or apricot brandy and top up with cava or prosecco for a deliciously fruity cocktail. Decorate with lemon slices.
